Nederburg's Uncharted Tasting

Soft plumes of dry ice rising under the fairy-lit trees, catching the last of the evening sun like something out of an ethereal novel. MCC moving through the crowd in cold, narrow flutes, canapés on trays that never seemed to empty, and a warm wind that made it easy to forget there was anywhere else to be.

I'm happy to admit that bubbles rarely win me over – either not lively enough to earn the name, or so sweet they set your teeth on edge. But Nederburg's Cap Classique struck the balance I don't often find: bone dry, with a bead so fine and so patient it seemed almost reluctant to rise. I would happily have quaffed nothing else all night.

Then the blind tasting began. Three wines, each one arriving beside a vessel holding a complex concoction of scents to be absorbed rather than named – and above it all, a voice so unhurried and so rich it might have belonged to a man who'd spent his life narrating nature documentaries. Taking us somewhere cold and salt-kissed, then somewhere inland where the air ran warm and dry, the story moved exactly in step with what was rising from the vessel and settling, slowly, over every sense.

I won't tell you what was in the vessel, or how the story ended, because the not-knowing is the entire architecture of this uncharted experience – and it deserves to unfold for you the way it unfolded for me. It was the first time I'd ever felt completely relaxed and awakened at the same time – and really, how wine should always be experienced – with touch, scent, taste and a beautiful story wrapped around it. And behind it all, one of Nederburg's female winemakers – beautiful, talented, gracious – whose passion for every pour was as undeniable as the narratives themselves.

We moved through to a three-course, wine-paired dinner with the same care as everything that had come before.

What has stayed with me is not only how seamless this extraordinary experience was, but how the staff moved like they'd rehearsed a hundred times and still made it feel uncontrived. So all credit to Nederburg for this remarkable and novel creative vision.
